A batch Lemoncello Spritz has developed an issue where the ‘cloud’ that was added has split from the wine.
The ‘cloud’ is a non-soluble citrus oil-based compound used in the beverage industry to give drinks a cloudy appearance. Examples of other beverages that use this ‘cloud’ are solo, cordials, fruit juice drinks, and other lemoncello spritzes.
The reason for the splitting in our product is unclear at this time, but it is believed to be the result of a complex reaction between the ‘cloud’, alcohol, and naturally occurring proteins in the wine. The result is that the ‘cloud’ clumps together and becomes visible in the wine.
Most importantly: The Lemoncello Spritz is still perfectly safe to drink.
Inverting, NOT shaking, the bottle a few times before opening will mix the cloud back into the wine.
The cloud will form again if the bottle is allowed to sit for a day or so, so repeat the process and you’re good to go.
